SES sensor is on and car is overheating, what could be the problem?

I got a 2001 Nissan Maxima GXE, It has short-ram intake and I took off the sensor that was in the stock intake, not the MAF the other sensor, but today I was randomly driving and my SES light came on and my car started overheating, but when I opened the hood, I could touch my motor because it was not hot. What could this problem be?

have you tried to put water on it? I think you need to put water on it in order not to over heat.
